I owe you a story about two cassoulets:
Once upon a time, there was a real, true, beautiful, mouth-watering cassoulet.
There was also another cassoulet that would make the French recoil in horror, but it was relatively quick to make, simple to do with on-hand ingredients and still, quite delicious.
